**Facts we learned today**

- The best time to tap sugar maple tree is when it is above 32F during the day and below 32F during the night. The bigger the temperature gap, the better the fliw of sap.
- In Missouri, the season for tapping is around February.
- One tree gives between 5 and 15 gallons of sap per season.
- Maple tree sap has 3% sugar. It looks like water.
- You need 40 gallons of sap to make one gallon of maple syrup.
